There are different varieties of yellow turnips, including the popular Boule d'Or (Golden Ball), which is characterized by its round shape and golden yellow skin. The flesh of the latter is pale yellow, dense, sweet, and very fragrant. The yellow turnip keeps well in the ground, in a cellar, or in a silo for several months. It is excellent eaten raw, grated in salads, or cooked, glazed, mashed, in stews, or in soups and stews. Its leaves are also edible and can be consumed like spinach.
