Here is an overview of the varieties you can discover (non-exhaustive list, depending on availability):
- Butterhead lettuces: Mescher Butterhead Lettuce (for a crisp heart and a delicious buttery taste), etc.
- Romaine lettuces: Valmaine, Paris Island Cos (for elongated and crunchy leaves, perfect for Caesar salads), etc.
- Oak leaf lettuces: Green or red Salad Bowl (for lobed leaves and a tender texture), etc.

The number of days to harvest varies depending on the varieties, but in general, the first leaves can be harvested about 35 days after sowing, for consumption as young shoots or mesclun. For butterhead lettuces, it takes a little longer for the head to form.
