Very resistant to cold, lamb's lettuce is sown very early in spring or late summer in soil enriched with compost. To obtain larger plants, it is advisable to thin the seedlings to about 15 cm. Lamb's Lettuce is delicious in salads, alone or mixed with other greens, and goes particularly well with simple vinaigrettes, so as not to mask its delicate, slightly nutty flavor for some varieties.
